Putting Up Texas Canning Class


Come join Stephanie McClenny of Confituras and Foodways Texas at Springdale Farm for this fun and interactive canning class that will take you through the preserving process from start to finish. We will discuss the basic principles, equipment, and safety of canning as well as the use of local and indigenous fruit and the important roles of sugar and acidity. If you’re in town early for the Foodways Texas symposium and want to learn a little something before the big event begins, please join us. This class is open to the public, but spots are very limited.

Stephanie McClenny started putting up fruits and vegetables in their peak during the summers and soon discovered the Texas bounty around her year round. Now she preserves for others with her canning company, Confituras. She sources only Texas fruits for her jams, jellies, and other preserves, which have won the 2011 Edible Austin Local Hero Award and 2011 and 2012 Good Food Awards. She lives in beautiful South Austin with her husband, 2 dogs, and a one-eyed cat.
